Lately my truck, 88 f250 7.3 idi no turbo, will start right up on a cold start then dies. Will start again on third time. Runs fine. What's goin on?

Sounds like air intrusion. Check for fuel leaks around the injector caps, and all fuel lines in the system. Any small fuel leak will let in air into the system losing prime. Wes at classic diesel designs has check valves to go on the mechanical fuel pump to help with backflow of fuel causing the loss of priming.
