So on my last trip I noticed both doors have a decent amount of slop in them when they are latched in place (close position). The doors are lined up properly with the cab, and close correctly, but there is in/out movement in the door when its latched in place. This makes it so when you hit a bump going down the road, the door "bangs" back and forth.

Is there an adjustment in the door latch mechanism that needs to be looked at or? Its rather annoying.

Most times it’s just a gobb of electrical tape instead of a bushing

You can adjust that striker bolt in and out as needed as well. So after you replace the plastic bushings you may find they need adjusted.
