I finally finished putting everything back together after having both cylinder heads rebuilt, and holy hannah did it take a few hours. I'm just curious how long a trained professional would be expected to take removing and reinstalling two heads and then reinstall everything else to return the truck to running condition? Obviously on a 7.3 IDI.

I must say that an IDI with fresh heads, new injectors and IP from R&D IDI makes for a very nice driving truck. It's not even the money at this point--I have spent sooo many hours wrenching on this truck that I feel more than married to it. Much respect to the guys who wrench for a living.

Mitchell1 Pro Demand gives 12.5 to 13.2 hours depending on the chassis configuration for an R&R of both head gaskets. There is no time in that figure for cylinder head work / machining / cleaning, etc.

There is also no difference in R&R time between a turbo or NA setup in Mitchell1.

Yep, book time of around 13 hours. Factor in age, and 15hrs is a good starting point for most v engine head removal jobs.
The bigger the job, the more poorly the mechanic (shop still makes out quite well due to parts markup on bigger jobs) is paid. Most engine replacement jobs, as in replace a long block, barely pay 20hrs. This is supposed to include cleaning an all parts swapping.

On a N/A tuck, I could usually get the job done in a 9 hour work day by pulling the engine. The heads would be ready for me to put on. I'd have clean, painted valve covers to put on and a new valley pan ready to go. That's not exactly the method that most or any shops would use today though. 12-13 hours sounds reasonable to me.

Well, I'll just not mention how many hours I think it took me. Doing this in frame definitely added some time but also all the cleaning of components before/during reassembly added time. I guess I'm probably a bit more OCD than a guy who's on the clock and really trying to get the job done within the allotted hours.
