The thing is running bad. The owner had it diagnosed somewhere else and I got volunteered to throw the parts at it.

As I said I'm not a 7.3PS guy, never worked on one just my 6.0 and the IDI's. Agree about tools, that's what made me fall for the IDI (after the PS) cause it's just so simple especially after a 6. So I don't have any specific tips, but generically you should start with a ODB2 bluetooth plug and Torque pro on your phone to monitor and read codes, other than that you're just guessing at "doesn't run right". You can get the ODB2 on ebay $10, the Torque app is lie $5. Start there before you throw a lot of money and effort at it. Youtube search for 7.3 powerstroke torque app or diagnostics.

under valve cover harness

if the truck barely idles, no power, seems like it's running on 4 cylinders chances are it's the UVCH
That sounds like what it was doing. Its smooth as silk this morning through.

Depending on the connection it could be fine and then fail, causing the IDM to shut down an entire bank of cylinders hence the feeling it's running on only 4.

Try removing the oil cap and give it a sniff...do you smell burnt wiring?

Also the next time it acts up, with the engine idling disconnect one of the harnesses going to one of the heads. If it stalls, you've found the good harness. If it keeps running badly, you've found the faulty harness.
