i am looking to replace my valve cover gaskets what is necessary to remove?

Don't lose the clip for the oil dipstick tube. It will leak bad if you do.

How much oil would leak if you lost the clip?

I just discovered my dipstick tube is out of the adapter and I dont appear to have a clip. I just recently lost 2 quarts over 50ish miles. I just bought the truck so im not sure how much oil she burns. Im hoping it all escaped out of there and that I don't have a bigger issue.

You are already seeing it. The tube is right at the top of the oil pan & the engine will 'pump & sling' the oil out while running (internal components moving) along with your blow-by issue.
I do not have the clip & bolt at present or I would send to you just to help out.
