have my probe in the spot that oldbull mentioned. i never see over 190*F unloaded. i have a mechanical sunpro gauge. when i park the truck like in the parking lot at school within a couple minutes of regular idle speed the temp drops ~10*F. it's pretty wild how fast and easily these things can cool off on there own at idle.

If you REALLY want to see if its your T-stat take it out and put it in a pot of water to boil it. Have a thermometer in there and watch to see when it starts to open and at what temp. Like it was mentioned previously the T-stat should open at 192*F.

Did that test to my Mercedes t-stat awhile back and found that it opened to early and never closed till 100*F.

My scout with the smaller rad will stay on 200 all day long idling through the woods. It'll creep up to 220ish if really working it hard. in my 250 will run 190 unloaded, it'll hit 225 with a load on climbing a long grade, thats with the aftermarket aluminum rad too.
