Ok so I figured it out. Long story short the fuel filter had actually gotten clogged. So, in case anyone is looking for it in the future; even if you have a good fuel pressure reading you can still get the fuel filter light coming on if your filter becomes clogged.
Now it depends on where you hooked up your sensor. In my case I have it hooked up in the schrader valve port. I believe the reason i was still getting "good" fuel pressure is because that port is before the filter and the lift pump was obviously working. I suspect that if my guage was hooked up after the filter I would have gotten bad fuel filter readings.
Now to the stupid part on my end. I started to ignore the fuel filter light for the last couple of days. The problem got so bad that my truck got to the point of barely running and actually died on me several times. Last night it died on me and wouldn't start until i went and got a new fuel filter. Since my guage led me to believe that I still had good pressure i thought it was something wrong with the wiring and or sensor. I was also experiencing issues with the overheat sensor going off telling me the truck was overheating. Since I had that issue starting at about the same as the fuel filter light I thought they were somehow related and have spent the last couple of days reading about them. I had lightly pressure washed the engine bay a few days ago and since have had the issue with the temperature switch and I thought the fuel filter light was part of it. So that combined with my guage telling me I had good pressure I ignored the fuel filter light.
So to anyone reading this, dont be stupid like me and ignore and the fuel filter light. At least change the filter for peace of mind to see if it goes away. I just hope I didn't shorten the life of my injection pump too much from driving it like I did.
