adding my 2nd battery today.

looks like i am short on negative cable.
should i go directly to the block?
i do have 0/1 cable grounding the chassis to the engine.

also...

how reliable are those mini fuses that attach to a certain circuit
but has 2 male connectors on the other side rather than a fuse?

i want to put my low amp GPC wire and the fuel pump on a switch without splicing into the harness.

yes both of them will be fused after the fact.

Allways best to go straight to main ground lug ( from batt to main ground lug the branch off) if your short then an uninterupted section of (say frame) with clean attatchments is acceptable.
Doing a section of frame or tin gives electrolysis a spot to pop up tho'
Think welding table, gd clamp on corner and work piece in center,( not an a route but it works).

Or multiple smaller grounds??
You asking about stake'on taps?
Look like a y made out ot wire connectors?

Functionally I see no problem with grounding to the block as long as you have a chassis and body ground too. The body is isolated from the frame via the mounts. Almost don't need the frame grounded unless you are grounding the body to it like they did from the factory.

Are you talking about fuse taps? They work great. Non-invasive. For low power add-Ons, I have no problem with them.
