No thermostat?

My truck has always taken driving 5+ miles of driving 60+ mph to start to warm up (100°+) and ran around 180° under normal empty driving.
Hook up a trailer (usually a 20+' gooseneck) and it runs 200-210°
I replaced the original radiator with an all aluminum one and it runs at 165° now. Even pulling an empty 34' dual tandem gooseneck, it was 170.
This morning (~40°) it took my truck 30 minutes of driving to get past 110°.
I think it's safe to say I don't have a thermostat.
Any problems with that? Issues that could arise?
I live in South Texas, so 90° 90% of the time. I would rather it run colder than hotter. Haha.
No problem with no thermostat in worm climate you should take off air plastic supply pipe if it’s a turbo and those large tiers put a lot of strain on the engine witch will make her get hotter.

I was having problems with my 97 7.3 not wanting to get warm so I put a new 190 in it. The old one opened at 180 ,the new one at 190, it takes about 3 to 4 miles for the needle to start to move, about6 to 7 miles to get any heat out of the heater and it was 45 degrees this morning. Unless you are working them they are cold blooded.
