I decided to stick with the proper tires for our trucks, and keep it the same across my fleet.

Mods, can you delete this?

I was at the tire store a few years back and guy had his chevy HD 2500 on the rack doing what your talking about. They put the tires on it and put on the ground only to see the side walls flex way out. It looked as if they were low on air.

He had them lift it back up and put LT's back on it.

From what I was told from the shop mgr was that even though they fall in spec load wise, the sidewalls are not rigid enough for the additional weight. Catastrophic tire failure (peel it off the rim) would most likely occur because of this too.
