Why would the pedal jump up and hit your foot after the truck is turned off?

Check the throttle cable. Follow it from the pump to the peddle and find whats hitting it when the engine shuts off.

If you turn the truck off while it's cold, thats just the cold solenoid releasing. When the truck is under 120 degree's coolant temp, the throttle is held open a tiny bit by the cold solenoid. Once it reaches temp, it releases and the idle will return to normal.

but your sensor could be bad, causing it to stay on high idle maybe. and releases when power is cut to the motor.

Edit:
"If you turn the truck off while it's cold, thats just the cold solenoid releasing."
Seems the solenoid isn't getting the message to release.
