I have 285/75r16s on my truck and in a roundabout type turn when you get a little lunge in the front of the truck while turning I get tire rub. I really am not interested in lifting my truck to the sky (read: getting old :) ) How much lift would i need to solve this problem?

where is your tire rubbing at? on fender or on bumper, or is it rubbing on the leaf springs? the 92-96, 97/98hd usually have some rubbing issues with the front bumper, which with some washers to shim it out, you should be fine.
