Are you sure you got an npt probe? Some of the eBay probes are metric. You can always jump up to 1/4 npt and just get a different compression fitting. Manifolds were available new from rock auto.
I think you should do a test drill in a piece of aluminum and see if you can run the tap into that hole. That will tell you all is well with the tap and drill. If this is your first time tapping a pipe thread hole make sure you do not run the tap all the way into the hole untill the threads on the tap are in the hole. Doing that will make the threaded hole too large for the probe to screw in and seal. ALL PIPE THREADS ARE TAPERED... Unless you are doing electrical condiut pipe..then its still the same threads but it would not be tapered threads.
Will do I have some aluminum laying around in the shop. I also have a question on the fuel filter housing. The fuel broke and I want to plug it off do you know the size of plug I would need for that?
The what broke? I'm assuming you mean fuel HEATER?
