I might be getting a Ford 1987 box truck with an IDI. It's got an automatic ( code G on the VIN ) and I'll want to convert it to a manual transmission at some point. What are my options?

Your best bet would be if you could find a donor truck of the same body style (1987-1991) with a good standard transmission to swap all of the parts over to yours. 4X2 would be a benefit as well. There's a possibility that you might have to have some driveshaft work done as well.

IDIBronco gives good advice.

You have two choices from Ford. 4 Speed Non-Overdrive T18 / T19 (pre 1987) and 5 Speed ZF Overdrive (1987 and newer).

International put a wide variety of transmissions behind the IDI. Mostly 5 and 6 speed Eaton/Fullers, but there are a few 9 and 10 speed Road Rangers out there as well.

Happy Hunting
