What is a safe engine oil temp to see? What is a maximum?

Depends on where you take the temp, as what you would see. Taking the temp at the drivers side rear (see pic) oil gallery just after the oil cooler will be close to the radiator temp, maybe 10* less. If you take the temp from the oil pan, you could read as high 360*+ depending on where the probe is, from the squiters that oil (cool) the cylinder walls, that oil just drops down into the pan, the cylinder walls are very very hot. Basically the oil temp coinsides with the Rad temp. Dino oil will take as hi as 550* before it flashes to a vapor. Synthetic oil will take as hi as 700* before it flashes into a vapor. The film dispersion is about 50* to 70* degrees below the point of vapor flashing. I take my oil temp at the oil gallery as stated above, I see it at about 15* to 20* below the engine coolant temp. What is safe maximum? I would say about 260*. With the volumn of oil and volumn pumped in an IDI, taking the temp just after the oil cooler will tell you if the oil cooler is partially plugged or not. If the temp there is the same as the engine coolant temp, your radiator is doing it's job or the oil cooler maybe partially plugged. From the top of the Rad to the bottom, there should be about a 20* (lower) difference.
Some of the vapor created, some call blowby, is the results of the oil squiters that cool the cylinder walls.
