Ok so I figured it out. Long story short the fuel filter had actually gotten clogged. So, in case anyone is looking for it in the future; even if you have a good fuel pressure reading you can still get the fuel filter light coming on if your filter becomes clogged.

Thanks for the input guys. I ended up just waiting for the block off plate. If I get another truck in the future I won't think twice about leaving the mechanical pump on temporarily if I have to. Sounds like its not a big deal based on several of your guys experiences.
Im installing a facet duralift pump in my 7.3. My question is can the mechanical fuel pump be left on unplumbed temporarily? Without fuel running through it to keep temperature down could the diaphragm overheat and fail puking engine oil out the side? Id really rather not find out while driving...
