Sterlings have such huge open spaces inside it's quite easy to get a good shot at the bearing races and go to town. Yes do try to keep the races matched to the bearings, carrier ones are a piece of cake obviously, just the pinion ones may fight you a bit. Brass punch is your friend there, do not use a steel punch to drive them out. Our axle has always used whatever bearings and races came with the respective carriers and pinions, no issues at all.

Idk about the axle shaft bolts, but I did notice rear Dana 60 shaft bolts are again flanged and serrated. Got a set that came out of a 1-ton Econoline, if our Sterling ones ever back out those will go in their place.

I always order factory ford bolts for the axles, they are always trying to sell me the metric ones for superduty , you have to dig for the older ones. In a pinch any good grade 8 bolts will work, but the shank on the factory ones is a bit longer.
