probably something that doesn't have to be so precise but...

the molecules in antifreeze are smaller than just water, and when you mix water and antifreeze together, the molecules mix in between each other. so 1 gallon antifreeze mixed with 1 gallon water will make 1-7/8 gallons mix.

thinking about it, that's not right because a gallon of water and a gallon of antifreeze has the same mass. But, because the antifreeze has smaller molecules it just means there are more molecules of antifreeze (IIRC etheline glycol) in a gallon than there is in a gallon of water .
