so I am starting to tear down the motor for new head gaskets Anne I'm curious as to the best/easiest/cleanest way to drain the fuel system like the injector lines and fuel filter so I can get started

Heck, just take them off. A little fuel will come out of the injector lines, but its not like a gallon will come out. As for the fuel filter, just spin it off & don't tip it over until you get over a bucket or something.
You don't have to do any kind of special procedure to drain the fuel system before working on these things... but you will have to get the air out beofre you fire it back up.

Alright, does anyone have any advice for getting the line off of #2 on the IP? No matter which way I turn the wrench there's not enough bite
