Where did you get the parts you have replaced? mainly the injectors. Timing could be off, you could have air getting in the system pre-ip causing some of the "misfiring" issues hence what you said with it running ok until you punch it and it runs out of fuel and the air starts getting in.
Pulled another clutch pedal assembly and dash from an 87-91 parts truck.
Nothing ever prepares you for how awful pulling these clutch pedal assemblies are.
I got an old one from wes, but literally anything you can seal off will work so as long as you can adapt a universal one to the plugs and hoses you'll be fine

Just be careful going 3g if you are still on vbelt system still if you hate screeching and have a large electrical load. Large draws don't get along with your vbelt system. At least mine doesn't until the batteries recover from starting. Immediately turning on the ac and lights makes that more fun.
I put the old pulley from my regular alternator on my 3g alternator and the thing squeaks less now but still can be rough the first minute after the truck starts. I think it's trying to tell me my batteries are shot and its gotta stay in full charge mode for up to 2 minutes to make itself happy...
