Speaking of those fridges, what causes them to not work - do they leak the freon out, or what else?

The gas electrics are ammonia absorbtion (no freon) and the heat exchangers tend to rust out after years of use.
If the fridg. isn't used for sometime the ammonia solution can settle and congeal which turns semi solid when heated.
When they haven't been used for awhile they need to be "shook up", turned upside down or as I was told, "put it in the back of your pickup and drive around with it for a week".

The gas valves can go bad, dirt or bugs in the pilot assembly, bad thermocouple and so on.

the freon leaks out because of rust and vibrations. One way to tell is if you open the fridge door and it smells of ammonia, it's toast.

Any way to check if there's still ammonia charge in there? Like a valve that can be pushed in to see if something will hiss on its way out? Also how does it leak out if it tends to go solid when it settles?

No the system is completely sealed.

Read my post again, it doesn't go solid as it settles.
