Regarding the '93 IDIT:
The factory volt meter is "wagging" at idle unless I put a load (head lights for example) on the charge system.
Seems alright at 1500+ RPM.
I don't have a voltmeter handy (last time that happens) because I'm on the road.

Welcome to the forum.
Use a stethoscope (or hold a length of 3/8" hose up to your ear) to isolate the source of the knock.
Hopefully you'll find it at the injectors ... if you need new ones, go with a vendor that's recommended by the forum. The odds of getting crap injectors at the parts...

I replaced the clutch in an '87 7.3 ZF5 today ... It had a flux capacitor hanging off of it.
The Service Manual calls it "damper" ... I didn't write the part number down.
Anyway this is the first report, that I recall, of flux capacitor on ZF5
Driver side started leaking about 5000 mi. ago. I got the parts ... just not the time.
About 15 years since I was up your way.
Still ... give the smoke a "smell check" ... maybe it is diesel fuel.
I agree, could be as simple as GP's.
My '93 IDIT (98,000 miles) uses less than a quart per oil change (about 4,000 miles) ... most of that is coming out or the valve cover gasket.
Determine whether or not you ran out of fuel first.
If you did, then you probably have air in your fuel lines.
Search "air in fuel lines", or some-such, within the forum.
I've used LUK, on N/A and aftermarket turbo trucks, with good results.
I've got one for my IDIT, haven't installed it yet.
BE SURE to get the IDIT specific kit ... balanced differently than N/A / aftermarket turbo kits.
Southbend makes a conversion kit too.

How does it "act" from 0 to current top speed (under full throttle)? Sluggish? Lots of smoke? If so, what color does the smoke appear to be?
No itemized invoice = no pay ... in my book.
That's too bad. I guess we (Americans) did it to ourselves. It seems like a lot of us would rather "save $" on an imported P.O.S. than pay a craftsman to repair what we already own.
