All of the sensor wiring along with the cold advance, the fuel shut off and the high idle are in the glow plug wiring harness. It's easy to see without that turbo stuff in the way.
It looks to me like one of us has the wiring routed the wrong way around the thermostat housing.

I am guessing the extra force provided by the booster is allowing the bypass to happen when the truck is on. When it's off, the force he is providing with his leg isn't enough to make it happen.

Sinking pedal is either air in the lines or an external or internal leak. ABS modules and master cylinders can leak internally

My thought would be to use the threads in the head to unscrew the swollen plug. screw a left handed screw into the glow plug. Apply lubricant and gently screw it out. It would be tough to get a slide hammer on the rear cylinders.
When you borrowed the DVM, did you run it side by side with your "bad" meter? You're introducing a lot of variables into this system. Your bad meter also compared to your dash gauge and you heard your batteries boiling. Which further suggests it was accurately reporting an over voltage.

What's an injector blowing? Tip leaking into the cylinder? Return cap leaking?
If an injector needs replacing on a set with unknown service history, it's proper to replace all eight. You'll need a return line kit and olives for each of your hard line connections along with the injectors...

Don't feel bad about the plugs. It's a poor design. Engineers used what's really a 6V glow plug and the 10 gauge wire to limit current to the plugs. I found some 12v plugs that fit and went with them. I should pull them and see how my experiment went
