Last I heard, many stainless steels will work harden and crack. I'd probably go with something like schedule 80 galvanized.

Depending on process fluid yes. Oil and steam tend to not have issues in stainless. But a galvanized pipe would do just fine.

Use steel hydraulic fittings. It's a pain in the ass to get cheap China stainless steel fittings to not leak. I have a five gallon bucket full of them that I'm going to scrap because they will not seal.

you can also use a hyd. hose and remote mount the sender/s, the problem is the weight of the sender on the pipe along with vibration cause's failure, trick used in T4 VW alum case's

I was thinking about the hydraulic hose or braided hose to remote mount as well. Seems like most only go to 212 degrees though. It is really close to the exhaust downpipe.
