what do I risk with new injectors

A guy is starting to build injectors and I wondered if I should be a guinnea pig. I think the guy is a very straight shooter and I have no doubt his intentions are honorable but I also just replaced my engine and I do not wnat to do it again.

I wouldn't do it. Trust your new expensive engine to someone with an established reputation for a quality product and service.

After what you've gone through, doesn't make sense to leave anything to chance.
