Oil cooler reseal isn't bad.
As bad as it sucks, I would go ahead and do the pedestal orings also. Unless it's seeping from the ebpv actuator. But then, I've heard stories of those things blowing oil.

My biggest concern of messing with the turbo/ pedestal is things being sized and/ or breaking.

Yep. I broke the top two collector bolts. Start soaking everything now. That way once you do finally pull it, they may come out. Lol

How likely could it be that of need to replace the oil cooler itself? How often do they need to be replaced?

Oil cooler itself is almost never the problem.
Only thing I could see is 1: it has a hole rusted through. 2: something like rtv ****** berries got in there and clogged it up.
So not likely.
