125* ambient is still lower than the air charge temp coming straight out of a turbo. I do know that the overall efficiency will be slightly lower with higher ambient temps.
I'd recommend testing out the intercooler with an ambient temp sensor and intake air temp sensor, right at the manifold. You'll see the efficiency of your setup and can experiment with a garden hose to see if it's worth plumbing up a whole sprayer setup and carrying extra water.
Water injection at mid-high boost may work better to drop air charge temps and boost combustion efficiency, while consuming less overall than an intercooler sprayer.
I used to do water and methanol injection on a gas drag car, and in that community intercooler sprayers were proven to be nearly ineffective.
