First tank is almost gone and it looks like I've already gone 120 miles further than it used to go and still have maybe another 50 miles left. The tank was also not full when I started so I'd say the truck is now significantly better on fuel than it used to be
I don't know the geography where you're at but having a motor shipped somewhere or driving 10 hours might be totally worth it in your case. A weekend of driving or a few hundred in shipping might save you a lot of trouble.
If the shop you're talking to can't be bothered to explain how they came to the conclusion they did and are treating you like this during the part of the process where they should be trying hard to get your business, you should leave. Find a shop that will explain what they did and will work...
I just put a 7.3 into my bronco and it will not start unless I do 12 seconds plus. I checked em and all plugs are good. I don't have long term data but longer burns are working for me

You could try blowing out your fuel lines with air to make sure they aren't restricted. Checking for fuel pressure might be good too. I have a gauge permanently mounted on my filter assembly for this reason

Got my diesel rad support patched up and painted today. Tomorrow I'm hoping to install it and get my engine accessories a little better sorted out at least. My rear driveshaft is too short but I should theoretically be able to drive this truck next week.

A gallon and a half is a LOT of coolant to be losing on the daily. If it were mine I would stop running it and get into tearing the heads off. With that much coolant "disappearing" you could hydrolock it, wipe out a cylinder and who knows what else. Also it could be pinholes in the cylinder but...
