“Shut can” the fuel bowl heater. Nothing good comes from it. The last two different 7.3s I did a fuel filter change on I saw the heater laying unattached at the bottom of the bowl, just waiting to short out. Blank it out and it will be one more thing not to worry about :)
I would fill the current ZF up with the correct aft fluid and drive it around evaluating the performance. If it seems better, I’d plan to switch to this Redline MTL fluid based on this thread:

Save yourself some grief and put a stud on the top bolt. It will seriously help you as you will be able to “hang” that heavy sucker on the stud as opposed to holding it up there while you fight for the bolt you can’t see.

Put a genuine oil pressure gage on your truck and see if it's related to oil pressure. I don't think the exhaust leak suggested above by gnathv is out of the question, but I think it could also be a lifter.
