Well, it seems like I'll be pulling heads off pretty soon. Some questions:
-I keep seeing references to Mel's write up about removing heads but all the links are 10 years old; can anybody put up a working link to that? Or repost it?
-Is it a bad idea to buy head gaskets from Advance Auto? Should I be looking for something specific?
-I'm not looking for high performance or upgrades necessarily, just a motor that will run well and for a long time. With that in mind, is there anything I should do while the heads are off that just makes sense?
-Anybody in the Western North Carolina area know of someone good to work on my heads?

They will probably get you the same head gaskets as everyone else. Since you have the time, I'd suggest looking on Rock Auto. They usually have good prices. I'd also recommend using Fel-Pro brand head gaskets. They are .010 thicker than Victor-Reinz. This is both uncompressed and compressed. This may help you out of a bad situation since these are close tolerance engines.

Is chuffing something that comes and goes? I watched the video and it sounds like one of mine, it just doesn't do it all the time.

Usually bad sounding engine noises that are intermittent are injector related, but if you have a lifter having issues you could have intermittent chuff that way.

It's more expensive than a tap, but since it's just a chaser, it won't cut any material away from your threads either. I think it's worth it.
