What's your opinion in changing from factory thermostat to a 203 temp thermostat in a stock 7.3 idi 1993?

The problem is that you wont find that thermostat that is also designed to block the bypass when fully open, maybe leading to overheating when being worked.

I ran a 205 t stat with the by pass restricted (wintertime use) and really dont remember much difference.

If it's not the factory Motorcraft or Navistar thermostat I wouldn't touch it. I believe the Motorcraft has a higher opening temp then the Navistar.

Because I know the general IDI design puts a lot of heat into the heads (and have dealt with overheated ones in the past) I'd be reluctant to go with a higher stat.

My truck has the snaps for a fancy grill cover but the cover didn't make it to me. :-(
I don't think I want to know what it would cost to have one made.

Probably not that much actually. I had a new top made for my boat and it was only $1200, and that was 108 Sq ft of material. One simple square I'd imagine is way cheaper.

Does your Wife sew? If so have her make one out of Nagahyde, then put the snaps or what ever on it and your done.

I agree, Cardboard.

My Grandma called it Paste Board, any of your older relatives call it that?
