I have moved a heavier 530CK with a 6800 lb trailer 45 miles including a 6% grade for 6 miles of it. I used a NA 6.9 with a Borg Warner 4 spd (T-19 or T-18, I forget). I was OK on the flats in top gear and 55 mph. On the grade, I got down to second gear and it was comfortable there. I did not have a pyrometer and yes, you should put a aux cooler on your trans. Mine had 3.55 gears.

I towed a Case 480E backhoe/loader from Montrose, CO to NJ with my then 1986 6.9 F250 Super Cab 4x2 with a four speed manual trans. I took I-80w going out, and I-70E on the way home.
Those hills thru MO must have worked her pretty hard. No different that the hills in IA, had you come back on I-80 though. Either way, thru PA you had to deal with hills.

Whoever told you that was spreading crap...
If 6.9s were never meant to be abused they wouldn't have been originally designed and installed in international medium duty trucks with a 26,000 gvw. I had one, and they are great trucks. I am not gonna lie, you need a lot of gears for that kind of weight, and obviously you won't win any races, but the point is, they are no less of an engine then the 7.3 IDI. The only weakness of the 6.9, is the small head bolts. If you overheat it, you can blow a head gasket, but there are a ton of other engines that would as well when over heated. The way to fix this is head studs (and new gaskets of course), which will be easy to replace if you have the motor out.
