just getting a feel for some ideas on what I can do to keep the engine temp down when towing. It runs up to about half on the stock temp gauge and then I just baby it from there so it doesn’t climb anymore. 7.3 idi with hypermax turbo. IP and injectors just all redone. Shop that did all the work set the timing but did it without a timing meter. Haven’t had a chance to hook up the pyro gauge yet

On any 7.3 the stock gauge is basically useless. You need an aftermarket gauge to really know what your temps are. Sorry to say it but that's the reality for us. The nice thing if you're on a budget is that the cheap mechanical equus gauges at Orielly work just fine for this purpose.

And get that pyro running! That'll tell you the other half of the story, and will let you back out of the throttle much sooner if needed than a coolant gauge ever will.

My bet is the shop followed the Hypermax rule book and you arent overheating at all. They are pretty conservative with extra fuel for obvious reasons. But still the gauges are a must. Plus then you can tune it with more/less fuel and timing.

I 2nd the suggestion get a aftermarket gauge set. It amazes me how many people rely on the crappy factory gauges to monitor their truck's performance. Even the cheap mechanical gauges you can get at the part stores are better than the factory gauges. Someone told me once the only thing "normal" was the setting on a washing machine.

Statt opens at 190. fully at 200-+ deg ....
210 deg...umm warmed right up.
300 deg err hot lift...
I am seeing 220 on 8% grades pullin 7k on the pin
200-210 casual pulls after 6 hrs of sustained haulin.
Hot and sweaty at 1000 -1100 deg egt. 200+ coolant, 11-12# boost faccett failing all day long. Holley on deck!
Just to keep the ip happy.

I tested my motorcraft stat and it wasnt fully open till nearly 212. I also hovered around 220 lately on but hills with my camper and trailer, these are normal coolant temps. Even 230 isnt weird but kind of the high mark for staying in control of temps.
