Hey guys I'm going to be putting an aftermarket gauge in my 7.3 idi for coolant temp. Where would I put the sensor ? I can't seem to find a lot on the subject

There's a square plug on the back of the driver side head, above the exhaust manifold. It's not used for anything and it's a great spot to put the sender, that way you leave the factory gauge alone and functional. Here's a pic for you, you can see the wire for my gauge going to that spot:

IIRC, it's a 3/4" NPT thread. The correct adapter should cone with the gauge. I put mine in the forward most port on the driver's side head (between valve cover and exhaust manifold like Helmet pointed out).
