Did you replace the "olives" on all the hard lines?? Looks like they are leaking fuel. Also, get a new cowl gasket before you get water in the engine thru the intake (even with the filter assy installed). I placed an old rubber mat over mine since it leaked again with a new gasket after heavy...
Get a 7lb radiator cap. You don't really need the 13lb cap & will lessen your engine coolant pressure. I personally use the #328 Stant Lever cap so i can release pressure a little safer than having to unscrew the non-lever caps.
Looks like you need to either replace your door striker or loosen it and move it in, tighten & check clearance. Will move about 3/16" to 1/4" which will pull the lock side of the door into the body. Probably have to adjust it a few times for ideal closure.

There are no coolant passages in/on the intake manifold. You can see on the flat area where the coolant passages on the head seals (with the gasket). This is probably where it is leaking coolant from the head.
You may just need a new intake gasket.
Why will the 7.3 heads not work? Sure they will. Just open up water jackets at corners & use sleeves at the headbolt holes.
Remember, if your 6.9 block is the original, block heater hole over starter may be cracked. Check it.
