97 Chevy Suburban Temp Gage At 210?

Ok I know this side of the forum doesn't get much traffic.
This is for the suburban in sig.
Way home tonight the Subs running great stop by a friends house left it running maybe 10 mins head out by the time I get home 5 miles I smell the sweet smell of coolant temp gage is reading 210 ok I check the overflow tank yep full to the hot line let sit for 5 mins running temp goes back to 190(that's what she always runs at) I notice the coolant overflow is now at the Cold Mark. I've never added water/coolant to the overflow tank(mechanic buddy said was not needed :dunno)
She still running great no leaks that I can see. Tomorrow I'll check to see how much is in the raditator.
Ideas?

The "overflow" tank is actually the reservoir tank.
Which the levels should go up and down as needed.
Could've just gotten a little warm and flowed over a bit.
I would be replacing the thermostat.

The thermostat is just a Advanced cheapo. Rad hoses was not very hot so I think the thermostat is stuck closed. I'll get a new one and go from there. I'm thinking a 195 unit Best brand?

Not sure on brands for the gm stuff, I always bought the cheapest/lifetime warranty at autozone.

Forgot to update this thread. New Thermostat from Napa solved the problem.
Old Tstat was caked in Dexcool mud I need to do a flush again.

Dexcool is the devil. Swap it for something better.

I'm running peak brand green coolant since I got the aluminum raditator I need to do another flush. Dexcool mud caked everywhere inside.
